SUMMER JAM


I love summer fruit. If you have access to apricots (or even just a cheap supply in your local supermarket) here's a recipe for microwaved apricot jam. It couldn't be easier:

APRICOT JAM

To make 3-4 cups of apricot jam you need:

Four cups fresh apricots. Choose very ripe fruit, remove the kernels but don't peel,and bring to boil in a large bowl in the microwave.
Cook until tender (approx 10 -20 mins). Take bowl out of microwave and add 4 cups of white sugar. Bring to the boil again in the microwave and cook for another 15-20 minutes.

Pour into sterilised jars and seal.

Happy jam making.

I love the Homegrown mag and have a few of those issues, I see there is a new one coming out soon. I too love fresh summer fruit as well. Happy New Year Mel.

wonder if it would work with plums. Our tree is laden.
