NO COOK




You know how at this time of the year you need a few treats on hand in case friends pop in or you need to take a plate or give a last minute gift to the neighbours that you'd forgotten to buy a pressie for? Well...

...here is the solution. My friend K's famous White Chocolate and Apricot Balls.

I must say I was sceptical at first. After all there's no butter which is usually the setting ingredient in truffles. But anyway I've made it heaps and it works.

K'S WHITE CHOCOLATE AND APRICOT BALLS

Mix together:

1 TIN CONDENSED MILK

1 PACKET VANILLA WINE or MALT BISCUITS (crushed)

1 PACK DRIED APRICOTS (chopped)

1 LARGE BLOCK OF WHITE CHOCOLATE ( I use Whittakers either Milk or White Choc and Macadamia - chopped)

3/4 CUP OF COCONUT(optional)

MIX ALL THE ABOVE IN A BOWL. ROLL INTO BALLS (with wet hands) AND ROLL IN MORE COCONUT

LEAVE IN FRIDGE TO SET.

(This is one of those ‘anything goes’ recipes. You could add nuts or other dried fruit or change the white chocolate to dark. It’s a great recipe if you need to take a plate and you only have 20 minutes to prepare something.)

Confession 1 The photo above is not of my baking - mine look lumpier and less smooth (bit like me). These freeze really well and (Confession 2)I can eat them straight out of the freezer. Hmmm, perhaps that’s not a good idea!

sounds like the ones I make with no choc in but with orange zest with the apricots etc.. :)

I made Janine's Tim Tam truffles for the library lunch today and they were a success. I did add some cointreau which may have contributed to that. ;)

ooooh, great recipe! TFS...cept I don't have the self control to not open the white chocolate and eat it before I get the chance to make the recipe...
